Cucumber Salad

I tried this simple recipe that was posted on Good Dinner Mom and absolutely loved it. There's something special about recipes that are passed down generations and have a great story behind them. Try it out and let us know what you thought.  Ingredients 2 medium cucumbers, peeled if desired, sliced very thinly 2 tablespoons rice wine vinegar 1 tablespoon sesame oil ½ tablespoon sugar 2 teaspoons soy sauce ½ teaspoon salt 1 teaspoon toasted sesame seeds Crushed red pepper flakes, to taste Instructions Slice cucumbers and place on paper towel to remove some of the moisture In a medium bowl, whisk together all other ingredients and add cucumbers. Crispy Potato Pancakes

Ingredients 2 medium potatoes 1-2 eggs beaten 1 kg chopped onion 1/4 cup chives, chopped 2 tbsp flour Salt to taste Pepper to taste 1/4 teaspoon garlic powder 4-6 tablespoons of Cold Pressed Sunflower Oil. Method Grate the raw potatoes & drain excess liquid.  In a bowl, beat the eggs & add the flour to it. Mix in the potatoes, onion and garlic powder. Season with salt & pepper. In a large frying pan, heat oil over medium heat. Gently add mixture into pan by forming patties and press lightly to flatten. Always read labels

Have you ever wondered what goes into the products we consume on a daily basis?   The Oil Collective was started because we started reading labels and while sometimes these can be difficult to decode, most times it's quite simple. Here's an example. We went out and bought dried blueberries and for some reason didn't pay much attention to the ingredient list for it. When I finally did, I was shocked by the number of things in there. What would you assume are in dried blueberries? I'd think it's "Blueberries". But the list wasn't that short. The ingredient list read "Blueberries, Corn Syrup, Sucrose, Citric Acid, Natural Flavor, Sunflower oil, Potassium Sorbate".  This is the reason, we always recommend you...
